For a documentary of such an extreme nature, the language is quite tame. About 4-5 uses of shit (some are written) and 9 uses of fuck (including a couple of uses of motherfucker).

To demonstrate how turtles react to a dead body deposited in the water, a dead pig is put in a pool with several turtles known to be carrion scavengers and they bite at it.

Ultimately, the three men are freed, but not exonerated by the state that seems more concerned of avoiding liability than serving justice.
