Brooklyn South (1997)

The pilot was often noted as getting a mature rating because if how a cop was shown getting shot in the head. The remainder of the show does show blood at crime scenes or bloody bruises on character's heads but it's the only truly gritty part of the show. It's still not as gruesome as crime scenes on NYPD Blue or Law & Order tended to be.
